THE GUIDE TO FLUFFY PANCAKES

As we are all stuck inside wondering what to do apart from binge watch Netflix, making pancakes is the perfect solution! What better way to spend your day (or morning) than making the perfect snack.

These aren't your everyday pancakes, (but you couldn't tell the difference).
The recipe is made from sour cream, which I know, yes, is slightly weird. BUT, It's a very good way of using left over food without it going to waste.For my fluffy pancakes, we used a recipe from 'her cup of joy'. (I'll leave the link below)


The ingredients are:

1 + 1/2 cup of plain flower
1 cup of milk
1/2 cup of sour cream
1 egg, slightly beaten
2 tablespoons of sugar
2 tablespoons of butter, melted
1 teaspoon of vanilla extract
2 teaspoons of baking powder
1 teaspoon of baking soda
1/4 teaspoon of salt

The full step-by-step:
1. Whisk together the egg, sugar, milk, sour cream, butter and vanilla extract.
2. Combine the flour, baking powder, baking soda and salt in a separate bowl.
3. Add the flour mixture to the liquid mixture and whisk together until no large clumps remain. Let the batter sit for 15 minutes. (you can even refrigerate it overnight and cook the next morning)

4. Heat a nonstick pan on medium/low heat. Spray with oil or melt a dab of butter in the pan. Add the batter and cook for about 2 minutes on each side, (or until not gooey).
5. Serve immediately. Garnish with fresh fruit or just a simple drizzle of sticky maple syrup.


For my lunch today, I used sliced banana, grilled peaches and of course, the classic maple syrup! (because it wouldn't be the same without!)
